Crust Ingredients:
- 200g: Oreo Cookies
- 4oz: Butter (melt)
- 1/2 cup: Oreo Cereal
Fillings Ingredients:
- 8oz: Cream Cheese
- 70g: Sugar
- 1 Egg Yolk
- 50g: Lime Juice
- 1 tbsp: Lime Zest
- 10g: Cointreau
- 90g: Milk
- 10g: Gelatin
- 160g: Heavy Whipping Cream
- 50g: Oreo Cookies
Instructions:
- Crust the Oreo cookies until very fine crumbs form, then add melted butter and binds the crumbs together.
- Pour crumbs into a bowl, add Oreo cereal and stir until well combined.
- Press the Oreo crumb mixture flat then keep the crust in freezer for about 15 minutes.
- Transfer cream cheese to a big bowl, add sugar then beat it using mixer until completely combined and smooth.
- Pour the egg yolk and mix them well together.
- Beat in the lime juice, zest, and cointreau.
- Fill the milk in a small glass, add gelatin.
- Place the glass of milk and gelatin mixture inside a bowl. Pour boiling water into a bowl, this creates a gentle heat to dissolve gelatin.
- Stir well until the gelatin completely dissolve, then pour it to the cream cheese mixture.
- Add the whipping cream and the rest of the Oreo cookies crumbs, mix them well together.
- Pour the fillings into the crust, refrigerate for about 3 hours or until firm.
- Topped whipped cream and a little piece of lime over top.
- Enjoy!
